The Chef of Brasserie Marie is responsible for the culinary element within the restaurant concept and the execution of the entire commercial, financial and operational goal that has been set for the Brasserie. Together with the Restaurant Manager, Brasserie Marie is managed as an independent concept within our hotel. Everyone is welcome and everything is possible! Locals who want to enjoy the famous French Cuisine, to guests who want to enjoy a well-deserved meal after their long flight. From marketing and profitability to human resources, material and hygiene for these processes, you are ultimately responsible.

Your role at De L’Europe

Executing a concept and positioning it in the market |  Determine and approach the target group with value proposal | In collaboration with Restaurant Manager and the Managing Director, apply menu engineering and determine sales prices |  Managing the kitchen staff of Brasserie Marie | Achieving departmental objectives, including profitability | Ensuring professional working relationships, open communication | Recruiting, training and coaching staff | Optimizing the culinary possibilities

The Ideal Candidate

At least 3 years of Culinary Management experience within a 5 star environment | culinary thinking level |  Creative in coming up with solutions | Passion to work together for the best result | Entrepreneurial mindset | Fluent in Dutch and English | Good knowledge of French trade and menu terms | Comfortable in a dynamic environment |  Be able to motivate and develop employees |  Eye for detail | You like to do things differently

Nice to have

Demonstrable experience in making a restaurant financially and operationally successful | Good knowledge of the city of Amsterdam
