Sous Chef – Trattoria Graziella

Together with Chef di Cucina, Arturo Casini, the Sous Chef is responsible for the entire culinary element within the Trattoria and rolling out the concept and executing the entire commercial, financial and operational goal that has been set for Graziella. Together with the Restaurant Manager and the all-Italian team, Trattoria Graziella is managed as an independent concept within our hotel. Everyone is welcome and everything is possible! Graziella is already called “the best Italian in Amsterdam” by many Locals.

YOUR ROLE AT DE L’EUROPE

Executing a concept and positioning it in the market |  Determine and approach the target group with value proposal | In collaboration with the Chef di Cucina and the Restaurant Manager apply menu engineering |  Managing the kitchen staff of Trattoria Graziella | Achieving departmental objectives, including profitability | Ensuring professional working relationships, open communication | Training and coaching staff | Optimizing the culinary possibilities.

THE IDEAL CANDIDATE

At least 3 years of culinary experience within a 5 star environment | culinary thinking level |  Creative in coming up with solutions | Passion to work together for the best result | Entrepreneurial mindset | Fluent in Dutch and English | Good knowledge of French trade and menu terms | Comfortable in a dynamic environment |  Be able to motivate and develop employees |  Eye for detail | You like to do things differently.

NICE TO HAVE

Demonstrable experience in making a restaurant financially and operationally successful | Good knowledge of the city of Amsterdam.
